Potato Tacos

Ingredients:

  • 2 pouches Potato Pearls® Smart Servings™ Mashed Potatoes, prepared
  • 2 pouches Santiago® Seasoned Vegetarian Black Beans, prepared
  • 1 head White cabbage, shredded
  • 1 head Purple cabbage, shredded
  • 1 gal Salsa, prepared
  • 100 each Corn taco shells, 6-inch, crisp, warmed
  • 2 qt Salsa verde

Instructions:

  1. Prepare Potato Pearls® Mashed Potatoes and Santiago® Black Beans according to package directions. Put aside.
  2. Combine cabbage and salsa in a large bowl, set aside.
  3. Fill each taco with ¼ cup of Potato Pearls® Smart Servings™ Mashed Potatoes, topped with 1 tablespoon of Santiago® Seasoned Vegetarian Black Beans, topped with ¼ cup cabbage mixture and 2 tablespoons of salsa verde. Serve immediately.
